Good morning friends, thanks so much for the lovely comments ...

I believe there will be a breakfast offering... In the oven right now are two pink grapefruit halves. Pics shortly....

Fresh from the counter top oven, baked pink grapefruit.... Topped with cinnamon, raw sugar and butter.... Mmmmmmmm. Eating al fresco, I will get a photo of the outdoor setting next for you all..... (0;f9534f52f4e3e894f53584905a2fc9d1_zps9571

Ok, we are outside on deck, in spa robes enjoying this simple breakfast with the song of the house Rhen and Gold finches at the feeder.

Here is the breakfast setting.... Fresh dark roast coffee from Whole Foods, English muffins, blueberry preserves etc...

Hope your are enjoying your morning as much as we are ((0;

Carolina Red Rice

Made this side dish for a Memorial Day cookout a couple of weeks back .

Started the stock the night before in a slow cooker .

4.5 c. of tomato juice , celery , onion , smashed garlic and 2 quartered habanero peppers .

I sauteed the veggies in some bacon fat with about 3 Tbsp. of brown sugar before adding to the tomato juice .

Cooked on low for 12 hours .

Stock strained with 1.5 c. of chicken stock and 2 Tbsp. of tomato paste added .

Spooned the mixture into a large roasting pan ; reserving a couple of large portions for myself ;) , then covered with foil .

The dish will continue to cook for the next 45 minutes before being presented .

I would say the dish stood out amongst the sea of pasta salads and other usual suspects brought to the covered dish party .

A light snack that's yum

Ingredients

Focacia bread cut close to 1" thick lightly toasted and brushed with olive oil

Fine chopped tomato, onion, parsley,

Grilled Haloumy cheese - ( A cheese that was invented in Cyprus )

Mmmmm Yumm

A good winter warmer from Greece

Only a handful of ingredients but beautiful to eat

Fasolatha or Greek Bean Soup

Ingredients:

500 grams of navy beans (or any other small dried white bean)

1 onion, peeled and chopped

3 stalks celery, chopped (leaves included)

3 carrots sliced or diced thickly

More vegetables can be used if its your preference

1 tin of chopped tomatoes ( or ripe fresh tomatoes )

1/3 cup tomato paste

1/2 to 3/4 cup olive oil ( to add and slowly stirred only when cooking is almost finished )

salt & pepper to taste

Lemon

Directions:

1- Soak the beans in water over night.

2- Strain the water and place the beans in a pot with new water.

3- Bring to a boil, remove from heat; strain water.

4- Replace the beans, add the rest of the ingredients and enough water to cover all the ingredients and simmer covered for an hour.

5 - Consistency is of a medium runny soup

NOTE - A pressure cooker can also be used

Serve:

Serve with crusty bread to dip

Squeeze lemon to taste after its ladled into bowl
