I have an Imperial Kamado which the green egg is a copy of. Best grill ever IMHO. You can go from a smoker to a roaster to grill by controlling the amount of fuel and air you allow to feed the fuel. And when you're done cooking today you can close it down and smother the fire and reuse the fuel. @A1UC do not hesitate to go for it.

that's the process I skip the eggplant caponta  to much work for home..

easily done at the same time in the restaurant...

and nobody does like the way I'm doing it..

unless it was at my favorite restaurant that I worked at !
