Nice pictures Steve, good looking place.

 

Love the way weeping willows look by a pond, I tried three of them in the same place about 20' from the pond, everyone died so an oak tree is there now.

Not to take away from your photography which you have very well covered......but that is a really good looking lens and camera settings. Really tough lighting to get action pics and your doing great. Well done

Are there setting on digital cameras to record as b/w? And see as b/w through either the screen or view finder?

Most cameras have a bw mode for recording to jpeg. Much like shooting with a constant focal length for extended periods of time, your eye simply becomes trained to the desired  effect and you begin to see the shot in bw before it's taken.
