It’s like filling out the RSVP card for a wedding that is months away -- how do i know what i’ll want to eat next September? Joking of course, I admire your commitment to its preparation. We know! It is insanely good. My wife always steals the crust. The yeast flavor and some olive oil and seasoned salt make it really good. I try not to make pizza too often because it is made of one of the white powders that we all should avoid.

I'm curious if you use the 00 Italian flour to make your pizza dough? We use Lily White's bread flour for ours, but I'd like to try the 00 Italian.
tigerwoodKhorns
Here is a picture. I cannot get it to flip correctly. I just use white flour. I should try whole wheat.

I haven't found how to get that color/texture without pre-baking.
JL Sargent
Supposedly the more protein in the flour the less chewy. That 00 Itallan flour has about 14 grams of protein. Typical flour has like 2.

No cheese, dairy does not agree with me. I do not pre-bake. Just put in the oven. I use the convection. After the crust is firm enough, I take it off of the cookie sheet and put right on the rack. It browns up just fine. The dough taste great.
JohnJ
Must be doing something wrong with mine lately... halfway through now. Should have sliced the mozzarella again this time, that whole milk stuff shreds funny. Green olives no way, I'm even out of the ripe ones today. In to oven it goes!! It's kinda like Mexican food, similar ingredients on a similar bread.

I would bet any of the dough's would be good just brushed with OO and sprinkled with good Parmesan or something, course salt ?
