To me, In & Outs biggest attraction was that they sold 7Up. 

I lived in Phoenix for a couple of years and would go to In N Out when they ran a special . I was going to school and broke . They were my least favorite fast food burgers .

Fried pork loin with Cajun seasoning

Served with tomitilla sauce, not shown

never sure how green stuff looks in a pic

Rice: cilantro, lime, garlic, salt & pepper

Black Beans: 1 tbs butter and a little salt heated to a boil then off, or low til served.

Now there is a lost art - pressure cooking. Learned from my mother the do’s and dont’s, scares the hell out of most people. The newer ones are much safer than the ones I grew up with. I blew the safety plug out the lid into the ceiling once, probably killed me if I had been looking over it. They will tenderize the toughest cut of meat. I think you could eat an old leather show if seasoned properly. Next time for ours will be St. Pats Day corned beef - .

The loins go on sale for $3-4 ea every few months, I buy a few of them

 

Serves 4, 30 min to plate

Trimmed the silver tissue off

cut in half and longitudinally

Some Cajun Seasoning, a little salt

Fried in 2-3tbs sunflower oil, best oil  I have found for almost everyting

Fried on low, lid on, lid off, lid on etc and turned.

Sliced into chunks and browned and served.

1 can of black beans + 1/3 can water, 1 cup of rice

Heat plates to 150 before serving, I hate cold plates

Sirloin Tip Teriyaki, dry rub Montreal overnight, then marinated overnight. Fried on low 30 min, covered. I buy 12pk cover in Montreal, individually sandwich bag, overnight in fridge then into freezer for later.

Boiled potatoes & Carrots: mixed with fried pepper  medium-low + 5 min then add onion, + 3-5 min then add 8 cloves chopped Garlic. Then add potatoes & carrots salt pepper paprika and 1/3 cup olive oil 5 mins in skillet. Fry covered, then uncovered, then covered etc.

Steamed Acorn Squash

Time to plate 50 mins

Tried a recipe from Hershey's yesterday that said it was a high difficulty deal.

So What!

No thermometer!

I've got heavy pecan-toffee-fudge syrup now, it's been sitting overnight and thought it would be good with second coffee so I tried to cut some and d*mn. Had to get a spoon! It's been 60 to 63 here so it's not that.

Had a spoonful and it does taste good, but this classifies as a fail. The recipe using the sweetened condensed milk instead of sugar is what I'll go back to.:sad:
