No thermometer!

I've got heavy pecan-toffee-fudge syrup now, it's been sitting overnight and thought it would be good with second coffee so I tried to cut some and d*mn. Had to get a spoon! It's been 60 to 63 here so it's not that.

Had a spoonful and it does taste good, but this classifies as a fail. The recipe using the sweetened condensed milk instead of sugar is what I'll go back to.:sad:

Can't properly make toffee without a thermometer

I mean people did way back before thermometers but I bet it mostly sucked

& you know what @thebes ? I never had the real McCoy until I was in my thirties, Log Cabin still had me satisfied the five times a year I ate pancakes. No turning back since I had the real stuff though. I've even put it in with bad coffee a couple of times instead of sugar.  Pralines are great in ice cream but I like pecans fresh and raw the best. Lost my supply, our neighbor cut his tree down a few years back.

 

The toffee was Heath bar bits in a bag at the baking aisle where I got those $$ Georgia pecans. I did pull the rest of the pecans out of the liquid fudge and eat them but had to toss the rest.

Glad you caught it before my mother did

I hate to use Easy Off when I can't open the windows........

The scaling is mostly from water vapor, that cooks off, what is in the water, or sugars in steamed food.

Either way, the nasty covers off we begin, we'll see if Easy Off is up to the job

I wonder if it's too cold outside for the chemical reactions....

Maybe we can get a sponsor for the Food Porn Section

Just realized I am off line for cooking this evening, Easy Off

 

Chinese, Mex or Pizza......Maybe an Italian Beef Sandwich with large fries and peppers...

Portillos , or one of the new kids on the block.....

 

Decided it is probably sugars from steaming, doesn't look like anything till it looks burned....tbd

Well, I'm not so sure:

 

"Praline, noun, a smooth, sweet substance made by boiling nuts in sugar and grinding the mixture, used especially as a filling for chocolates."

 

Now, granted, there is the southern pralines with the pecans but those are almost never made with that Yankee secret sauce, maple syrup. Maybe those ones should have a their own special, something like "Maplelines".

Probably kinda like the first time you heard real music.  One of the great things in life is discovering a real something, a flavor, a feeling, a whatever.  It's one of the fun things that make life worth living.

 

It's always nice, like in the case of maple syrup, that the alternative to the processed stuff is not that much more expensive but imparts magic the mass produced alternative simply can't do.

Yep  maple syrup is not used here ; molasses mostly , but the concept is the same .
