Speaking of pepper growers, it's time to let Jimjimbo back in here.  He grows the most unique varieties and I have been able to transform them in the past into some unique and highly popular sauces.

Hmm. I didnt know he had left.

Dems look like the kind you need a full respirator and chemical gloves

Food processor has to be used outside and if you put the stems with a bit of the pepper on them in the garbage disposal,  it'll clear the kitchen for a half hour.  Absolutely need gloves to handle them once they're cut.

He can join the club.  I don't either.  My batches are a lot smaller than that, giving me the benefit of multiple instances of aerosol capsaicin exposure.  It's therapeutic to feel the burn right into your skin.  Outside?  Not enough control for cleanliness.

I made pepper jelly using a 7 Pot Brain strain batch of peppers. They were harvested while green. After filling jars, I gave a neighbor some of the "scrapings". The next day, I asked him how he liked it. He replied, "It was OK." I didn't ask for a clarification. It wasn't killer hot, to me.
