What is bi-wiring?

Tore into wall to route HDMI feed to wall-mounted LCD TV and decided to also put speaker wiring in the wall. I am routing three speaker cables through wall to access panel on far side of the room. I know that I must avoid AC wiring, but I was wondering if there will be any trouble if I bundle all three speaker wires together and pull them through to the access panel. Also, I presume there is minimal radiation from the LCD display and that there will not be a problem running the wires behind the display. Drywall guys are showing up in three days and I want to get it right before they buttom everything up. Any useful insights to share? Thanx
