Remixing in 5.1 for older films

Hey. I figure you guys would know more about this than I would. My question is about movies that were originally made with stereo or mono sound. Many of them have been released on DVD with 5.1 surround sound. The thing that bothers me is whether or not this is really better. To me it seems better, but then I've got this image in my head of people who enjoy full screen movies better than wide screen (cause they're getting more, heh). I wonder if I just feel like I'm getting more out of the movie, but really it's a better experience to watch them with the original soundtrack.

Also, anybody know exactly how they remix this stuff? If someone could explain to me in simple terms how they can take sound from a mono track and split it into a 5.1 track with each speaker seeming to make wonderfully consistant sound, I would greatly appreciate it. Guess that's about it. Thanks.
