Lard is easy down here. wife and I have a running battle over MY cast iron. To the point where she leaves its maintenance solely to me. I sorta won ... my cookware isn't rusting.

Hi all I char peppers under the broiler, if i don't have a fire. If I want the pepper crisp/fresh and skinned, i use an acetylene torch to burn the skin. Happens fast enough to not cook the pepper.

I have to go along with getting rid of the sour cream. Use more mayo. And the yellow mustard suggestion. The brand of mayo will make a diff in taste, too. ...and what am I doing up at 3AM? ....

water quality is a factor. Our water is quite hard, here ... some Ca. I couldn't get my brew to taste right when I went to Alaska. ... a dash of salt in the beans fixed it. The [too] clean water was picking up stuff I was unfamiliar with.

Hi Mike, Method of brew can mess up good beans, burning it is the worst. Perc is asking for trouble. Good brewing can make marginal bean OK. The old axiom applies, though garbage in ... garbage out

Just 'cause it is grown in Hawaii, doesn't make it good. Not all Kona is good. I was living there when Kauai turned to growing coffee. It wasn't that good. $4/lb ... at the same time, a good Kona coffee retailed for ~$25/lb. That coffee tasted like chocolate. I agree wholeheartedly about Starbux. I can't drink it straight. It needs to be doctored to be palatable, to me.

Hi vasubandu Oh yeah ... Some coffees will sour if you let them sit. I remember one Gevalia roast was particularly bad about it. I prefer a light -medium roast. French roast is too dark for me. I think of it as pre-burnt. the roaster here sez Robusta beans are generally dark roasted because they are inferior

I crack my bottle every couple of weeks. today was one. I sat in the swing.... out in the sun. They are having a thing at the park ... A celebration of our town's history and people. Music, food, games ... and we were "on display". A sort of invite for people to come see us. The locals didn't have to dress. We did wear clean ... Saw a few friends, hobbled home. A shot and a smoke on the swing seemed just right. a couple week ago, the granddaughter was here. Wife was running laundry. We graywater ... Kid picks up a little piece of scrap plywood. I notice you say "try" ... When I was a kid, we used to have "Jungle Juice" parties. A garbage can with Hawaiian Punch mixed with whatever came in the door. Seemed like no matter how much or what went in, all you could taste was HP. one day, I got invited out for "a drink". Told him I didn't drink any more ... My twisted mind thinks of Everclear. no, I don't drink that. It is a dandy food safe solvent.

my boy gave me a bottle of WoodfordReserve for Christmas. I'm not agin scotch. I can't do vodka or gin. I "overdosed" on vodka when I was a kid .... the smell of gin puts me off. I spose that IF could get some good, I might change my mind IDK. by the by don't fall for the blue agave hype when you're shopping tequila. May or may not taste the best.
