  1. And since you have a Webber kettle.......... http://www.thesmokering.com/HowTo/weberribs/default.jsp
  2. Randall, do you have any recommendations on a smoker? I have a Webber kettle, that's it. fini, Sorry about the late response, but Thursday, I went down pretty early. Mainly because, Friday, I had to make a trip to Chattanooga, then to Nashville and then back home. I was pretty worn out by this time and didn't even want to get started with all the stuff I keep up with on the comp. As for recommendations for a smoker, since you are not doing compitition cooking(which does not allow electric smokers, Kansas City rules), I have included several links. The easiest smoker for the house is an electric one. And in no way will it comprimise taste as opposed to a charcoal or gas smoker. I DON'T CARE WHAT ANYONE SAYS. I'll put mine up against anyone's, regardless of the method they use. I use a cheap Brinkman electric(79.00-89.00) which I have modified with a fairly high dollar(278.00) across the line thermostat. My cost was WAY,WAY, less though. It gives outstanding results. The following links will give you an idea of what is out there. Even so, just google smokers, and you will have unlimited options. It all depends on how deep you want to get into this. I love smoking BBQ which is really the only true way to do BBQ. Cooking ribs, butts,or shoulders in an oven or on a grill(unless you do indirect heating) is sacrilige, it's just not the real thing. I also make a pretty fair amount of money on the side. All that being said, I'm very close to pulling the trigger on a new smoker from the first link. Also, google SMOKE RING, URL included...for all things BBQ. Hope this helps, Randall http://store.cookshack.com/p-113-smokette-sm009-2-stainless-steel.aspx '> http://store.cookshack.com/p-113-smokette-sm009-2-stainless-steel.aspx http://www.amazingribs.com/BBQ_buyers_guide/smokers/electric_smokers.html '> http://www.amazingribs.com/BBQ_buyers_guide/smokers/electric_smokers.html http://www.thesmokering.com/ '> http://www.thesmokering.com/
  3. Winchester, I have never cooked ribs in an oven, but as far as heat, the formula should be the same. Mine are always done in my smoker. But here goes... If I were doing them in an oven, I would try to keep the ribs off the pan, sorta like trying to simulate a grill over the pan so that the heat would more evenly wrap around the ribs. I shoot for between 230-240 degrees for 2 hours meat side up. I then spray both sides pretty liberally with apple juice, or pineapple or experiment(I've even tried orange juice). Put the ribs back on the rack, still meat side up. Let 'em cook for another hour. Then take 'em out again, respray both sides again, then wrap 'em up tightly in heavy aluminum foil and stick 'em back in BONE SIDE UP. Cook for another 1- 1 1/2 hours. Take them out, remove the foil, they should be very tender at this point, you can check by pulling one of the bones. If it feels loose, you are probably in good shape(after awhile you get better at this). You really don't want the meat to be falling off the bone, no matter how good that sounds. If they are at a very tender stage, you are ready to finish them off with a glaze. You make the glaze by mixing one cup of your favorite BBQ sauce with about 1/4 to 1/3 cup of honey. Mop the chit out of them, both sides. Really no need to worry about which sides up at this point. Place the ribs back on your pan/rack without the foil, 30 minutes later mop them again, just flip them over from the way you had em in for the first 30 min. I would probably cut my temp. down to around 200-210 before you stick it back in after starting the glaze. Not probably, definitly cut the heat down, even 180-190 for the last hour would be alright. Hope I didn't rattle. And if you get the chance, go for a smoker, you'll never cook Q any other way once you get the hang of it. EDIT: this was mainly just cooking times, your rubs and other stuff should already be taken care of before my ramblings kick in. My finger is getting sore. SO...... Enjoy, Randall
  4. It is probably a fork lift battery, and he plans to use inverters. Your BIL is a very industrous guy if he ends up doing this. If he also has the inverters to do this, he is more than just an odds and ends collector. Best of luck and I want pictures if this is the way yall go. Randall
  5. Fini, Removing the membrane gives a tenderer rib and also allows the flavor from the smoke and/or rub to penetrate both sides. The ribs should be cold, read right out of the fridge, to make it easier to seperate. Start at the end with the largest(widest)bone and gently pry the membrane up with a butter knife. Once you lift the edge of the membrane, you’ll see another, thinner membrane. Don't remove it, that's what holds the ribs together while they're cooking. After you get the membrane started, get your fingers underneath and pull it loose to the point where you can use a paper towel to pull it the rest of the way off. Always keep changing your grip so that the you are holding the ribs down with one hand and getting your grip on the membrane as close to the ribs as you can. Use as many paper towels as is needed. I can usually pull the entire membrane off without it tearing. If it does tear, no big deal, just get your butter knife out and continue like you started off. Cal, I saw that you had already posted a more concise version, but I had already done all this typing and wasn't going to let it go to waste. Edit: BTW, friends don't let friends EVER boil their ribs, even for a few minutes. Randall
  6. Colin, after reading your website via your new sig., I would have expected, at least, a more in-depth explanation[] Randall
  7. The grasshoppers seem to have moved out around here or are still dormant, if that's the right word; but I'm still hoping that the over abundance of rain the past two months is the cause of this. As far as fireflies, the past several years had me wondering about them too. This year, however, has resulted in a vast resurgence of them. I live in town, but go outside at night and it's a true lightshow. I guess since it seems that quite a few folks have spotted or have the grasshoppers and honeybees maybe it's just a natural insect thing. I hope that is the case. God knows, we ourselves cause enough (read basically all) problems with the enviroment. Randall
  8. Thought I would ask about this since the forum covers such a wide range of the U.S. Has anyone noticed a lack or total absence of grasshoppers this year? Also, honeybees. I'm not suggesting this has anything to do with the oil spill, but in the past, by this time of the year you would see grasshoppers and honeybees everywhere. When you have these benificial inscects dissappear you can bet your @ss that there is gonna be a problem further up the food chain. I have not seen a single grasshopper and very few honeybees this year. I can remember when I was a child that going barefoot outside meant that you were going to get stung when stepping on a bee, probably several times during the course of the summer. So, what about where you are? Any similar observations? Randall

  10. Stephen, that's my intentions. And I HAVE at least learned that virtue. On a more personal note, Please look for a PM sometime in the near future not related to the forum. Like within the next day or two. Thanks, Randall
  11. All my thanks for the offer, it is much appreciated. And say hello to Mrs. dtel, I hope they do come from down there so that I can meet yall. Randall
  12. I DO appreciate everyone's input and have decided I'll wait out a better pair before I pull the trigger. Thanks to all. Now I can put all my attention on smoking a couple of Boston Butts. Again, Thank Yall, just keep me in mind if you see something I miss. You know what I'm looking for. Randall
  13. Roger, I got over those burning pockets years ago. I bow to your advice. Your Humble Apprentice, Randall
  14. The bad...almost 5 hrs one way. And I haven't done any research/reading on Quartets. The good...I might be able to drive a little more and meet dtel and Mrs. dtel. If I'm not being too presumptuous. Thanks
  15. Frank, the biggest problem I have with buying Klipsch is my location, NE Mississippi. It's a little like being in a Klipsch void. The only person that I know of on this forum within any reasonable distance from me is BS Button. And I do realize that not all owners are members of this foum, but even using CL with a 150 mile radius of me, the pickins are poor. Nashville is 3 hrs from me, Memphis 1.5, but there is rarly ever anything within reason(distance and price) . That's all my whining for right now, thanks for the reply. And, I may very well pass on these.
  16. OK guys, I should have checked in on these sooner, but I expected that the price plus shipping would be too high. They are on ebay @ http://cgi.ebay.com/KLIPSCH-FORTE-II-FLOOR-STANDING-SPEAKERS-OAK-/120575693202?cmd=ViewItem&pt=Speakers_Subwoofers&hash=item1c12df1192 '> http://cgi.ebay.com/KLIPSCH-FORTE-II-FLOOR-STANDING-SPEAKERS-OAK-/120575693202?cmd=ViewItem&pt=Speakers_Subwoofers&hash=item1c12df1192 I have pretty much given up on finding a pair of Chorus IIs that are reasonable, and even though that would be my 1st choice, after extensive reading on here, these may be just as appropriate for my room size...14X24 approx. with the speakers along the long wall. Shipping on these are 175.00 to my locale. I'm just asking for your opinions as to worth and condition plus the tear in one of the passives. I'm not going to flop around on the floor if these turn out to not be mine, I still have my Heresys. There is a little over 9 hours left, so I figure I'll get enough input by the time it's over with. Just wanted input from the only place where opines really matter. TIA Randall
  17. Believe whatever you want. I'm from Mississippi and everyone knows how retarded we are. Ummm..... huh? Sorry JT, I had been on the phone with my ex, about 10 minutes before I saw your post and I vented. Again, my apologies. What set me off was the use of a double pole breaker to supply two seperate 110V circuits. I have seen DP breakers go bad before and burn the insulation off an entire temp. light string. The reason it did not trip was a faulty tie between the two poles. The "good" side just did not let the bad side trip. This was an industrial and not a residential setting. As far as using a DP to assure that both circuits are dead for maintenance, I would hope Coytee would know he's on shaky ground to begin with and this rigging would be taken apart or at least determed at the breakers when not in use. Again, sorry for my unwarrented response. Randall

  20. Coytee, Your first concern should be how much amperage you are going to require at the very end of all this. You must know how much your max. load will be, ie...what will the total amps be with EVERYTHING you will have plugged in at the final point. You were alright until you threw the 250' of 12/3-w/g into the mix( I think). Sorry, just had a hard time following the garage door thing, and wheather or not you were adding breakers to the box in the garage and leave from there or if you were going to feed from the house. I have no idea what your BIL meant by less strain on the hot lines. If you are running 110/115V equipt. you should use two single pole breakers. A two pole breaker is for 220/240V. equipt. Two pole breakers are either internally or externally conected so that both sides will trip(hopefully) at the same time. Using them for separate 110V. receptacles may not give you the personal protection...read kids, animals and other loved ones that you need. I have been an industrial electrician for 40 years and if you could draw a rough print of your intentions and post, I'll give you my suggestions. Randall
  21. Even running in triode with 16 watts, believe me you'll have all the power you need. Randall
  22. I see, said the blind man. Thank you, James.
  23. The following speaker is on the bay. http://www.theaesthetics.com/assets/KLIP6.jpg From looking at the serial number, it would appear that they were either built on the 55th week of the year????, or they were made the first week of Feb. So, which is it? Just trying to figure the coding out. I'm assuming that Klipsch put the week date on with single digits+4 placeholders until they got to the 10th week. Anyone know?
