Please explain how/why a "cheater" plug adapter functions

I fail to see the problem.

I can describe it for you.

In an amplifier with three prongs, the middle prong is a safety ground. It connects the metal chassis of the amplifier to your GREEN WIRE in the electrical box which runs to EARTH GROUND outside at your service point. This means your amplifier's metal chassis is grounded directly to earth.

Why? Inside the amp, there are many AC and DC voltages high enough to kill you. If ANY of those wires or parts carrying high voltage should come loose and touch the metal chassis, and that chassis was NOT grounded to earth, that high voltage would go from the metal chassis, through your body to ground. Thereby causing harm. Instead, when the unit is plugged into a proper three prong outlet, any dangerous voltage inside the amp can NOT make the chassis HOT. It will always remain at ground.
