The differences in sonics are too subtle to justify that kind of cost...considering the circuit/topology the particular 12AX7 is in, the types of parts used...etc...

Mike said a mouthful.  This is the correct way to think about tubes.  What Maynard said is also right on spot.  The difference between new vs NOS should be subtle all things considered.  Price can vary more dramatically and is related to supply and demand.  I am in the camp with others that spending a fortune does not equate to better SQ.  Some people like to think of how much that spent and get some sense of quality or perceived  better SQ.  Instead of focusing on the minute, make sure everything else in the chain is good and you should be able to reach a great sound.

I have no doubt about the subtle differences in sound quality of various tubes both old and new production, but the thing that is not so subtle, as others have mentioned, is the ruggedness and longevity of older tubes, especially those that are driven hard, such as in guitar & professional amps. jmho, ymmv.
