Moderators dtel Posted April 20, 2015 Moderators Share Posted April 20, 2015 (edited) Ok so I adding this because it was fun, well organized and I just love crawfish. And I know some here on the forum live where this is not normal or done at all. The place is normally baseball fields, park and parking lots. There were 3 rows a few hundred feet long with of teams boiling crawfish, at least 60 teams. Pic's are with a little Olympus waterproof camera, it was 100% chance of rain so I had to be safe. The way it works is they boil them and put the crawfish in little paper containers set out on tables in front of each booth. You just walk around pick some up and go eat them, then repeat as much as you want. I tried at least 50 of the 60 booths, sometimes more than once and the beer booth which was not free but you need it eating a lot of crawfish. The crawfish was brought in with trucks, here there unloading one, then forklifts kept delivering them all day to each booth to be boiled so no one would run out. I have no idea how many they cooked, last year they cooked 47,000 pounds, probably less this year because rain was expected ? Moderators dtel Posted April 20, 2015 Author Moderators Share Posted April 20, 2015 It was set up like this, three rows like this with tables for eating crawfish about every 50 feet. the tables were plywood on top of barricades like used by police, with holes in the wood. Under the holes were garbage cans, you just eat and throw the peelings and trash in the holes, smart idea.
Moderators dtel Posted April 20, 2015 Author Moderators Share Posted April 20, 2015 (edited) It's Louisiana so there were beer booths and daiquiri booths, some, music and dancing (not me) and plenty of food. Yea daiquiri machines on wheels, your in Louisiana, we have daiquiri store's with drive through windows. Moderators dtel Posted April 20, 2015 Author Moderators Share Posted April 20, 2015 There were all different boiling setups, from the normal pots to large pots, and some custom models in between.

mustang guy
Check out the scary dude with the hospital wristband in the third picture above (post #4 picture 3). The drink wristbands are red. Escaped from the funny farm. He obviously didn't like being in the picture.... Moderators dtel Posted April 20, 2015 Author Moderators Share Posted April 20, 2015 Each team had a booth, some decorated more than others, but this is a general idea. Almost all used pirogues to hold the crawfish before putting them in the boxes.
CECAA850
We had a company cater a boil for out work about 2 years ago. The rig they brought out had an I beam with an electric winch. They cooked maybe 100lb at a time. They'd load about 3 bags, winch it up and roll it down the I beam to the boil pot. After it was cooked they'd lift it up and roll it down the beam and lower it into the spice pot. After soaking, they'd run it to the end of the beam and tip it into a chute that emptied into a big cooler. It was cool.

That's smart, that one guy had a nice pot, after boiling you just swing the basket up and the top acts like a funnel to get the crawfish into the pirogue. That pot holds 3 sacks which surprised me, we have the regular pot/basket, but were not doing hundreds of pounds. He told me the started him with 11 sacks, and were delivering more during the day if needed. I told the forklift driver, "we need deliveries in our neighborhood like this", he laughed and said he wished he had that at his also.

Moderators dtel Posted April 20, 2015 Author Moderators Share Posted April 20, 2015 Then there was music all day, I didn't get any pic's of the first band the Top Cats and only one pic of the second band which was named 6. They were good but I was still busy eating crawfish. 6 played mostly 80's 90's rock with a few other local things.
Moderators dtel Posted April 20, 2015 Author Moderators Share Posted April 20, 2015 The last bad was great, 50% of the reason I wanted to go. It was Rockin Doopsie and the Zydeco twisters, they put on a great show, it's could not have been better. Just in case you don't like Zydeco they played a lot of other music also. Three of the band members are brothers, the front man Rockin Doopsie sings, and his two brothers play drums and accordion. It got a little muddy in the grass area in front of the stage, and rained the last hour but it's didn't slow down anything.
mark1101
So first they are steamed, then they are soaked in the seasoned water? I guess that's the way to do it if you are repeating the process a lot. Not like doing a low country boil just once.
Sancho Panza
Boiled in Zararain's Crab Boil. More spicy than low country &/or Olde Bay...

Moderators dtel Posted April 20, 2015 Author Moderators Share Posted April 20, 2015 (edited) It got muddy, but no one cared. One of the members of the band was at Woodstock, a old dude playing a guitar so being muddy and raining they played a Jimi Hendricks song Hey Joe. People were running and sliding in the muddy grass as they got crazy. (not me) The old guy with the hat played that song perfectly which was surprising, he really was unbelievable. I have a video of it, if I ever figure out how to load it I will. During the song when Rockin doopsie seen what every was doing he called this guy up to the stage who had on a plastic poncho and asked if he could have it. He put it on and jumped off the stage and went sliding in the mud, twice, got back on the stage and finished the show. He had a good time.
