mr clean Posted July 27, 2019 Author Share Posted July 27, 2019 Been smoking the pork butt for 11 hours. Checked temp and it was 203 degrees in most places but stuck 194 degrees in a few and the bones still tight. I will check it in a hour. Started around 240 degrees for the first 4 hours or so and then jacked it up to about 270 degrees the last 8 hours.
