Never did much travel in the south I had my wife email me the recipe she found. We tripled this recipie and it filled a 7.5 QT pot almost full. CRAWFISH ETOUFFEE Serves 4-6 people 2 lbs Peeled Crawfish (Do not rinse crawfish, leave fat on), OR boiled and seasoned 1 stick Butter 1 Onion (Minced) 1 tsp Minced Garlic 2 stalks Celery (Chopped) 1/2 Bell Pepper (Chopped) 2 Tbsp Steak Seasoning Dash of Salt, Black Pepper & Red Pepper to taste 1 Can (10.5 oz) Golden Mushroom Soup 1 Can (10.5 oz) Cream of Celery Soup 1 Capful of Kitchen Bouquet (small bottle size) Parsley Flakes 1/2 to 1 Soup Can of Water *Note: If you use a cast-iron pot, your crawfish will discolor and darken. If that's a problem use a Magnalite or other pot. In the bottom of a 5-quart pot add, Butter, Onion, Garlic, Celery, Bell Pepper and Crawfish if raw. Add Steak Seasoning, Salt, Black Pepper & Red Pepper Cover and cook on "Medium-heat", 5 to 10 minutes until onions are clear and crawfish are curled, if raw add later if cooked. Stir. Add Mushroom Soup, Celery Soup and water. Stir. Add Kitchen Bouquet and sprinkle Parsley over entire mixture. Stir until Kitchen Bouquet is blended well. Cover and simmer for 30 minutes on "Low-heat" until heated through. Serve over Rice *Note: I don't put salt in my Rice water, because the soups can be salty. Used to watch Justin Wilsons' show, he even made a Turducken one time! Mentioned the trinity often. Outer Banks used to be one of the highlights. She's been calling, texting a lot and been very helpful since I sold the wheels. Won't let her carry me to the grocer `cause it's a walk I made as a kid a thousand times. Monday she helped me deliver stuff to the lawyer and refill my Katrina gas can. That was the other time the Colonial shut down. So I've got 7 1/2 gallons, my regular sized one and the fiver I just filled at 30 cents higher that it had been last week.
