Most of the neighbors are wealthy(IME) and would not consider doing any where near the amount of manual labor I do.

Gas lines......some stations sold out of gasoline.  Hoarding and piggish behavior?  I've got 3 gallons of lawn mower gas.....first $150 takes it.

I know I talk about food alot, well I never got this size by accident. 

 

Tried a new recipe tonight for crawfish etouffee, only change was I added a pound of shrimp.

 

It turned out really good.

Oh... I think I could force that down.

 

We had bluegill tonight. Not near as elaborate as etuffee

 

just rolled in corn meal, s and p....deep fried

This was not elaborate, just alot of chopping, onions, celery bell pepper and garlic.

 

What you had is one of my wife's favorites.

that's a lot more than what the gills take ... once you get them filleted.

I have to get your direction, so I can try some Cajun cooking.  Never did much travel in the south

I had my wife email me the recipe she found.

 

We tripled this recipie and it filled a 7.5 QT pot almost full.

 

CRAWFISH ETOUFFEE

Serves 4-6 people

 

2 lbs Peeled Crawfish (Do not rinse crawfish, leave fat on), OR boiled and seasoned

1 stick Butter

1 Onion (Minced)

1 tsp Minced Garlic

2 stalks Celery (Chopped)

1/2 Bell Pepper (Chopped) 

2 Tbsp Steak Seasoning

Dash of Salt, Black Pepper & Red Pepper to taste

1 Can (10.5 oz) Golden Mushroom Soup

1 Can (10.5 oz) Cream of Celery Soup

1 Capful of Kitchen Bouquet (small bottle size)

Parsley Flakes

1/2 to 1 Soup Can of Water

 

*Note: If you use a cast-iron pot, your crawfish will discolor and darken. If that's a problem use a Magnalite or other pot.

 

In the bottom of a 5-quart pot add, Butter, Onion, Garlic, Celery, Bell Pepper and Crawfish if raw.

 

Add  Steak Seasoning, Salt, Black Pepper & Red Pepper 

 

Cover and cook on "Medium-heat", 5 to 10 minutes until onions are clear and crawfish are curled, if raw add later if cooked. Stir.

 

Add Mushroom Soup, Celery Soup and water. Stir.

 

Add Kitchen Bouquet and sprinkle Parsley over entire mixture. Stir until Kitchen Bouquet is blended well.

 

Cover and simmer for 30 minutes on "Low-heat" until heated through.

 

Serve over Rice 

 

*Note: I don't put salt in my Rice water, because the soups can be salty.

 

If you prefer SHRIMP ÉTOUFFÉE , you can use this recipe and just substitute the crawfish or any other seafood or sausage.

The Creole Triumvirate. Celery, onion, bell pepper. They're practically never without garlic here! Quad-umvirate?

 

Gas?

D*mn they found a way to break us from it!

71% of stations without mid-morning here.  

 

The guy is a little off, GSP is SC!

my sister was' at MyrtleBeach... she did find a place to fill up, so she could get back to Hooterville [Gibsonville NC]. Getting stuck in MyrtleBeach doesn't sound too bad, though

Gibsonville has a lot more shade trees though. Was up near there last weekend in Burlington, NC!

True, in New Orleans cooking it's called the Holy trinity, it's in many things.

that does look easy. We'll have to give it a try.

Not hard, pretty simple really. I think you would like it, ours was a little spicy but I added the mushrooms and some sausage that were boiled in the crawfish, they were pretty hot already.

They are saying the gas thing should be back to normal by the end of the week ? They have never lied to us before.

 

Been to NC many times but never all the way to the coast.

Yessir!

Used to watch Justin Wilsons' show, he even made a Turducken one time! Mentioned the trinity often.

 

Outer Banks used to be one of the highlights. You could walk almost a half mile it seemed to get to the waves from the lighthouse before they moved it in from the washed away sand.

 

* Do you know how hard it was to type Justin's last name? Twice I put Williams in there(Mr. Game 7), and I'm on my second cup already

Guess I'm a guilty co-conspirator.

My estranged aunt who I was around last in the 1970s has been bored I think. She's been calling, texting a lot and been very helpful since I sold the wheels. Won't let her carry me to the grocer `cause it's a walk I made as a kid a thousand times. Monday she helped me deliver stuff to the lawyer and refill my Katrina gas can. That was the other time the Colonial shut down.

So I've got 7 1/2 gallons, my regular sized one and the fiver I just filled at 30 cents higher that it had been last week.

I'd take bids on the big one!
