oldtimer
Speaking of pepper growers, it's time to let Jimjimbo back in here. He grows the most unique varieties and I have been able to transform them in the past into some unique and highly popular sauces.

Absolutely need gloves to handle them once they're cut.

I went to the shop of the man who invented the cultivar. He was making hot sauce with a 3 foot stick blender, about 300 peppers no mask or gloves. i thought he was nuts....... oldtimer
He can join the club. I don't either. My batches are a lot smaller than that, giving me the benefit of multiple instances of aerosol capsaicin exposure. It's therapeutic to feel the burn right into your skin. Outside? Not enough control for cleanliness.

ssh
I made pepper jelly using a 7 Pot Brain strain batch of peppers. They were harvested while green. After filling jars, I gave a neighbor some of the "scrapings". The next day, I asked him how he liked it. He replied, "It was OK." I didn't ask for a clarification. It wasn't killer hot, to me. oldtimer
The 7 pot are not wicked hot, but have a lot of great flavor, at least the ripe harvested.
