If grilling then sear, if smoking just put them on until ready. rplace Posted February 25, 2019 Share Posted February 25, 2019 For sure sear first from what I understand the whole point is to build layers of flavor by caramelizing at a high temp then cooking at a lower temp to the correct temp. I always sear my chicken thighs on the big Green egg at high temp with lots of flame for a short. then throw them on indirect heat for 45 minutes to an hour.
