Oh, I completely agree, I am having more fun than when I was young, but it does hurt a little more after some exercise doing something. I think I am having more fun because I appreciate things more and the free time to do whatever I want. The opposite of working all the time and trying to squeeze in fun things.

The son in law was the first person I thought would be a big help, with jobs like that a young in-shape guy like him would really help, and make you feel older at the same time.

his name is Oliver.. the one eyed dog.. a stray dog that she found..

Done for the weekend.   Todsy we pulled the garage door and paneled behind it.  It's back and retentioned.  Time for a break.  We leave to bowl in about 30 minutes.  Just enough time to change and have an adult beverage.  Cheers!

For sure sear first from what I understand the whole point is to build layers of flavor by caramelizing at a high temp then cooking at a lower temp to the correct temp.

 

I always sear my chicken thighs on the big Green egg at high temp with lots of flame for a short. then throw them on indirect heat for 45 minutes to an hour.

 

I've never had better chicken at any restaurant
