skimmed the brown chicken stock

preped chicken and pounded between plastic wrap

wraped chicken with procuitto , well I used the Spanish equivalent

pounded the prosciutto and made a seasoned dredge

flour , salt , black pepper , & rosemary

saute pan med heat  1/4 cup oil. 

dredge chicken place in pan as the oil starts to shimmer but we'll before

it smokes

Brown each side place in side pan 

broccoli rappini cut bottom stems , pick though 

place in boiling water , cool to desired tenderness , remove with tongs

and place in ice bath

strain and squeeze  rappini and place in side pan 

saute sliced mushrooms with seasonings salt , black pepper , rosemary

till almost crispy and brown.   place in side pan

place side pan in preheated oven

in suate pan are white wine and or Sherri reduce , and brown chicken

stock and reduce further , squeeze lemon add  lemon zest in. add butter

to thicken pan sauce

take side pan out of oven ,make a center of plate presentation , 

start with rappini , add chicken , and mushrooms . sauce accordingly

Nice dish Mike, although, being veg, I would not eat..........but still appreciate the work gone into it :emotion-21:

Gary is seafood acceptable ? I will make  scampi with porcini mushroom risotto.. Maybe with a roasted eggplant caponata..
